1995 – Complex, concentrated and well-balanced
Harvest: 18th – 28th September.
Blending: Merlot 70% - Cabernet Franc 20% - Cabernet Sauvignon 10%.
Tasting note: aromatic wine, well matured, with a nice texture and with fine, ripe tannins; it is now at its peak.
Serving suggestions: this vintage is ideal with grilled game birds such as partridge and woodpigeon. It also combines well with fish and seafood dishes and is excellent with many cheeses.
1996 – Rich and well-balanced
Harvest: 23rd September - 4th October.
Blending: Merlot 72% - Cabernet Franc 18% - Cabernet Sauvignon 10%.
Tasting note: well-balanced wine with good ripe tannins, pleasant to drink now.
Serving suggestions: this vintage is best drunk with game terrines. It compliments white meat perfectly (stuffed Christmas turkey) and also “foie gras”.
1998 - Complex, concentrated and well-balanced
Harvest: 24th September - 6th October.
Blending: Merlot 75% - Cabernet Franc 15% - Cabernet Sauvignon 10%.
Tasting note: aromatic wine, well-structured and well-balanced.
Serving suggestions: this vintage goes wonderfully with grilled beef rib or caramelised shoulder of lamb. Its red fruit characteristics are brought out with sheep’s cheese served with cherry jam.
1999 – Rich, powerful and well-balanced
Harvest: 21st September - 1st October.
Blending: Merlot 80% - Cabernet Franc 15% - Cabernet Sauvignon 5%.
Tasting note: a wine with a remarkable structure, well-balanced and with strong tannins, it already drinks well and may be kept for several years.
Serving suggestions: this powerful and slightly rustic vintage goes well with cold meats such as the famous Spanish ham, “pata negra”. It is also delicious with wild boar stew.
2002 – Rich, rounded and well-balanced
Harvest: 24th September - 3rd October.
Blending: Merlot 70% - Cabernet Franc 18% - Cabernet Sauvignon 12%.
Tasting note: very expressive, aromatic wine with powerful tannins but well-matured allowing a good roundness in the mouth.
Serving suggestions: this vintage goes very well with “confit de canard” with cepes or with “carré d’agneau” with morels.
2003 – Concentrated, powerful and complex
Harvest: 11th - 25th September.
Blending: Merlot 73% - Cabernet Franc 18% - Cabernet Sauvignon 9%.
Tasting note: gorgeous colour, blackberry aromas, a powerful wine due to strong tannins. A remarkable vintage that may be kept for many years.
Serving suggestions: a wine with a spicy ripe fruit aroma, it goes perfectly with Rossini tournedos, duck, or strong cheeses, such as a good Roquefort.
2004 – Complex, powerful and spicy
Harvest: 29th September - 15th October.
Blending: Merlot 79 % - Cabernet Franc 11% - Cabernet Sauvignon 10%.
Tasting note: intensive and bright ruby colour with an elegant and distinguished nose. An initial pleasant and fruity taste, which develops into full tannins with black currant, black berry and pepper aromas. A concentrated vintage, with strong tannins, which may be kept for a long period.
Serving suggestions: a pleasing wine which goes very well with all kind of cooking and particularly with spicy dishes such as curried chicken or shin of veal with “piment d’Espelette” and morels.
2005 – An exceptional vintage
Harvest: 20th September - 7th October.
Blending: Merlot 75% - Cabernet Franc 14% - Cabernet Sauvignon 11%.
Tasting note: a gorgeous dark Bordeaux colour. Intensive smell of ripe fruit and woody, spicy scents. The impression is smooth and the taste powerful and vinous. A well-structured and elegant wine with strong tannins and truffle aromas. An exceptional vintage, which may be kept for many years.
Serving suggestions: a very nice wine to serve with sophisticated cooking, particularly truffle-based dishes: from a simple omelette with truffles to fresh “tagliatelles” with truffle and “foie gras” or with a hen pheasant with truffle and “foie gras mousse”.
2006 – Rounded and powerful
Harvest: 20th September - 4th October.
Blending: Merlot 83% - Cabernet Franc 10% - Cabernet Sauvignon 7%
Tasting note: beautiful colour, with flashes of purple. A fairly intense nose, highly aromatic with dominant notes of wild cherries and blackberries. On the palate, the 2006 marries suppleness with robust structure, with deliciously dense tannins providing a strong finish, making this a wine which can be cellared for some time.
Serving suggestions: the 2006 should prove to be an equal match to dishes with fairly strong flavours, such as a rack of lamb with “herbes de Provence”, filet of wood pigeon “à la Rossini” or roasted fish served with chard and red butter sauce.
2007 – Complex, fruity and appealing
Harvest: 29th September – 16th October.
Blending: Merlot 76% - Cabernet Franc 11% - Cabernet Sauvignon 13%.
Tasting note: red with purple tints. The subtle bouquet combines red fruit scents, pepper and spices. Deliciously full-bodied on the palate with fine, silky tannins
Serving suggestions: the vintage 2007 will bring out the best in roast leg of lamb in a pastry crust.
2008 – A favourite
Harvest: 10th – 24th October
Blending: Merlot 78% - Cabernet Franc 11% - Cabernet Sauvignon 11%.
Tasting note: dark red colour. The rich, complex bouquet rolls out its ripe fruit with toasted hints. The sensation on the palate is generous, confirming the scents in the bouquet and revealing nicely-structured tannins. The terroir is showing through in a mineral touch that gives this wine an elegant finale.
Serving suggestions: a delicious steak grilled over a vine-branch fire and served with the traditional Bordeaux red-wine and shallot sauce, a lobster with lime, roasted lamb with spices.
"Le Différent 2007" – Freshness
Harvest: 29th September – 16th October.
Blending: Merlot 80% - Cabernet Franc 15% - Cabernet Sauvignon 5%.
Tasting note: a wine with a striking red colour, and a nose bursting with red fruit and toasted aromas. On the palate the attack is lively, with fine, elegant tannins and a great length of flavour.
Serving suggestions: Le Différent will express its full character with simple, elegant cuisine: grilled meats, Italian dishes and seafood.
"Le Différent 2008" – Roundness and delicacy
Harvest: 10th – 24th October.
Blending: Merlot 82% - Cabernet Franc 9% - Cabernet Sauvignon 9%.
Tasting note: careful plot selection produces a wine with a pretty colour and purplish tints, while the bouquet rolls out red-fruit scents and spices. The sensation on the palate is rounded and rich in flavour, the tannins are fine and nicely structured and the elegant finish offers finesse and balance: a subtle alliance between freshness and substance.
Serving suggestions: this vintage is at its best with delicate-tasting dishes such as a king prawn skewer served on pilau rice or veal filet mignon roasted with rosemary and served with spring vegetables.
